I’ve created a quiche that even my macho husband loves.  I used a milk and yogurt combination instead of heavy cream for a lower fat content. Feel free to experiment with the vegetable by using spinach or asparagus instead of broccoli.  Have fun with it and make it your own quiche that will delight your senses and tickle your tastebuds. The leftovers are great heated up for lunch or dinner later. Ingredients

  • 4 eggs
  • 1-2/3 cup milk
  • 2 Tablespoons yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon dill weed
  • 2 green onions (scallions) coursely chopped
  • 1-1/2 cups broccoli
  • 2 cups cheese, grated
  • 1 pie crust

Instructions

  1. Break eggs into large bowl and beat.
  2. Add milk and yogurt to eggs.
  3. Season with salt, black pepper, red pepper and dill.
  4. Fold in green onions and broccoli.
  5. Put pie crust in deep dish pie plate.
  6. Put grated cheese on pie crust.
  7. Pour egg mixture into pie crust.
  8. Bake at 425 degrees F for 15 minutes.
  9. Lower oven to 300 degrees F for an addition 45-50 minutes until crust is brown and knife inserted in middle comes out clean.
  10. Let cool for 10 minutes before cutting into serving sizes.

Notes

I used a combination of grated cheeses, whatever hard cheeses I have in the frig. I used 1/2 as much Feta and Sharp Cheddar as I used of Monterey Jack and Colby cheeses. Proportion the cheese according to your taste.

I used Greek yogurt which is lower in sugar and higher in probiotics.
